Concept definition, repositioning support

For Alesti, a hybrid brasserie-bistronomic restaurant with modern and sculptural decor, we conducted a customer experience audit, a competitor analysis, and worked on the business plan to determine the establishment's new positioning.

We recommend transforming it into a classic and comforting brasserie, open 7 days a week and featuring a weekly menu, to keep neighborhood regulars coming back. We therefore propose a new menu and pricing structure, communication guidelines, and a new name: Brasserie Alesti!
